Sweet potato chipotle noodles

Ingredients:

  • 2 sweet potatoes, spiralized!
  • 4 ears sweet corn (kernels cut off the cob& optional, I skip the corn)
  • 1 cup chopped fresh cilantro
  • 1 cup chopped fresh greens - spinach, micro greens, arugula, whatever



Dressing


  • ⅓ cup olive oil (optional, I don’t use any)
  • 3 tablespoons water
  • 2 individual chipotle peppers, canned in adobo sauce
  • 1 clove garlic
  • 1 teaspoon raw maple syrup
  • juice of one orange
  • juice of one lemon or lime
  • generous pinch of salt



Directions:

Saute’ sweet potato noodles over a small amount of coconut oil or steam/water fry them if you are avoiding oil. Blend all dressing ingredients in a food processor or blender, add sauce to noodles and whatever other veggies you desire. I love to add chopped peppers, cilantro, red onion etc. For extra spicy you can add shaved jalapeños
