Sweet potato chipotle noodles
Ingredients:
- 2 sweet potatoes, spiralized!
- 4 ears sweet corn (kernels cut off the cob& optional, I skip the corn)
- 1 cup chopped fresh cilantro
- 1 cup chopped fresh greens - spinach, micro greens, arugula, whatever
Dressing
- ⅓ cup olive oil (optional, I don’t use any)
- 3 tablespoons water
- 2 individual chipotle peppers, canned in adobo sauce
- 1 clove garlic
- 1 teaspoon raw maple syrup
- juice of one orange
- juice of one lemon or lime
- generous pinch of salt
Directions:
Saute’ sweet potato noodles over a small amount of coconut oil or steam/water fry them if you are avoiding oil. Blend all dressing ingredients in a food processor or blender, add sauce to noodles and whatever other veggies you desire. I love to add chopped peppers, cilantro, red onion etc. For extra spicy you can add shaved jalapeños
