Raw vegan sushi rolls

Ingredients:

For the “rice” you will need:

  • 1 small head of cauliflower
  • 1 small zucchini
  • lemon juice from 1/2-1 lemon

Start by peeling your zucchini. Cut the cauliflower and zucchini into smaller pieces and place into your food processor and pulse for 1 minute or until a rice like consistency. Add lemon juice to your cauliflower and zucchini rice and set a side. If your rice doesn't stick together add a small amount of avocado to make it stick together.



  • 4-6 nori wraps, preferably raw
  • 1/2 cucumber
  • 1 red bell pepper
  • handful or more of sprouts
  • 1 small avocado
  • 1/2 cup of mango cubes


Prepare vegetables by slicing them very thinly. Have water by your side when you roll up your sushi. Start by placing the cauliflower and zucchini rice on 1/3 of your nori wrap and line vegetables, mango and sprouts on top. Roll up your sushi and use water so that the nori sticks together. Use a sharp knife to cut the nori roll into smaller bite size pieces.


For the dressing you will need:

  • 1 heaping tbs tahini
  • Juice from 1/2 a lemon
  • Juice from 1/2 a lime
  • 1 tbs fresh ginger, grated
  • 1 tsp ground cumin


Blend all your dressing ingredients together in a bowl with a spoon until everything is evenly mixed. Add water if too thick!
