Organic vegan red lentil soup

Ingredients:

  • One and a half cups organic red split Lentils
  • 2 cups organic veggie broth
  • 1 can organic coconut milk
  • Half yellow onion pan sautéed
  • 2 to 3 cloves of garlic crushed and pan sautéed
  • 1 inch ginger graded and sautéed

Sauté onions, garlic and ginger all together in a small amount of coconut oil or water fry for no oil option.

Throw Lentils, veggie broth, coconut milk, onions, garlic, ginger all together in an Insta pot or in a pot on the stove and cover/cook on the sauté and simmer setting.

Season with:
One and a half teaspoons cumin
One and a half teaspoons turmeric
1 tablespoon curry powder
pink salt and red pepper flakes to taste
