Mexican cauliflower rice
Ingredients:
- Cauliflower rice
- Cherry tomatoes
- Red onion
- 1-2 Garlic cloves
- Chives
- Cumin to taste
- Paprika to taste
- Himalayan pink salt to taste
- fresh squeeze of lime
- Top with chopped avocado and chives
(I like to add Finley sliced fresh jalapeño for a nice kick)
Helpful hint: I buy the pre-portioned bags of organic frozen cauliflower rice from Costco, just throw it in a pan and heat lightly until it’s unthawed.
If eating warm, heat a small amount of coconut oil in a pan and sauté onions and garlic minced… Then add a color flower rice and heat until warm. Turn off heat, add seasonings fresh chopped tomatoes avocado and chives and enjoy!
