Cauliflower fried rice

Ingredients:

  • 3 cups frozen cauliflower rice
  • 1/2 cup peas
  • Chopped carrots
  • ½ onion diced
  • 1 red pepper
  • 1 head of broccoli chopped
  • 2 tbsp of coconut oil to cook veggies in
  • 1 tsp salt
  • 2 tbsp of coconut aminos
  • 2 cloves garlic minced
  • 1/2 inch fresh ginger grated


 Heat coconut oil in a pan and add ginger, cook until slightly brown and then add all veggies.  Cook veggies until brown and add cauliflower rice. cook until warm and then add aminos and spices.
