Carrot ginger soup

Ingredients:

  • 1lb organic carrots
  • 1 organic onion
  • 8oz organic veggie broth
  • 3 cloves garlic
  • 3tsp fresh ginger diced
  • 2 teaspoons pink Himalayan salt
  • 1/4 can organic coconut milk



Directions: sauté onions carrots garlic and ginger, once browned throw into an Insta pot, Add veggie stock and coconut milk. Cook for approximately 20 minutes then blend!

Topping:
Unsweetened coconut flakes and pumpkin seeds, I toasted them in a pan until they were golden brown and sprinkled on top!
