Apple, fennel and pomegranate salad

Ingredients:

For the salad:

  • 3 cups baby arugula
  • 1 Granny Smith apple, thinly sliced
  • 1 small fennel bulb, thinly sliced
  • 1/4 cup pomegranate seeds
  • 1/4 to half avocado
  • Fresh Lemon
  • Organic dill

    Super simple! Finley sliced apples and fennel, toss all together in a large bowl with pomegranate seeds and avocado, topped with fresh chopped dill and a squeeze of lemon! This is the cleanest version of the salad… If you would like to make an actual dressing here is the vinaigrette recipe:


For vinaigrette dressing:



  • 1 small shallot, finely chopped
  • 1 tablespoon fresh lime juice
  • 1 tablespoon fresh lemon juice
  • 2 teaspoon raw organic honey
  • 1 teaspoon organic Dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon white pepper (I used cracked black pepper)
  • 1/4 cup extra-virgin olive oil
