10 minute zoodle spaghetti

Ingredients:

  • two organic zucchini spiralized
  • 3 to 4 cups organic spinach lightly steamed or sautéed with a small amount of coconut oil
  • 3 to 4 cups of spinach until it’s lightly wilted and zucchini noodles until warm.


Sauce:

  • 1 cup fresh tomato
  • 1 1/2 tablespoons olive oil
  • 1 1/2 teaspoons dried basil (or dried oregano)
  • 1/2 clove garlic (finely chopped)
  • 1/4 teaspoon Himalayan salt


Recipe Directions
1. Place all raw tomato sauce recipe ingredients into food processor.
2. Pulse briefly to incorporate all tomato sauce ingredients. (Do not over-process, it's nice to leave this raw recipe a bit chunky.)
3. Pour over zoodles and spinach

Toppings:

  • Hemp seed cheese !
  • 1 cup organic hemp seeds,
  • 1/4 cup nutritional yeast,
  • 1 teaspoon onion powder,
  • 1 teaspoon garlic,
  • 1 teaspoon pink salt

Throw all ingredients together and blend! This will make a large portion so store the extras in the fridge!

Top zoodles with Hempseed cheese and crushed red pepper flakes for a bit of spice
